DESCRIPTION

An easy chicken & mushroom pie recipe is always high up on the list when it comes to winter comfort food! It’s even easier to make a quick chicken & mushroom pie by using ready-made pastry.

INGREDIENTS:

4 chicken breasts; cubed

250ml mayonnaise

15ml oil

1 medium onion; finely chopped

250g white mushrooms; sliced

15ml chicken spice

200ml chicken stock

Salt and pepper

1 roll puff pastry

1 egg

METHOD

  1. Pre-heat your oven to 180 ºC. 
  2. In a bowl, combine chicken and mayonnaise. 
  3. Heat oil in a pan, then fry onion and mushrooms.
  4. Add chicken and chicken spice, then fry until cooked through. 
  5. Pour in stock and cover. 
  6. Cook until the sauce reduces and becomes thickened. 
  7. Season with salt and pepper to taste.
  8. While your chicken filling is cooking, roll out the puff pastry with a rolling pin.
  9. Cut out your pastry to fit a casserole dish. 
  10. Top tip: mini casserole dishes are great for individual pies.
  11. Place the chicken mixture into the casserole dishes. 
  12. Shape the pastry to cover the casserole dishes and place on the pie. 
  13. Cut a slit in the middle to allow air to escape during the cooking process. 
  14. Brush egg wash on the pastry, then place pies into oven and bake for 25-30 minutes or until golden brown on top.
