INGREDIENTS:

1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¾ cup milk
1 large egg
2 tablespoons melted butter (or oil)
½ teaspoon vanilla extract
½ cup chocolate chips
Butter or oil (for cooking)

 

METHOD:

  1.  Mix the dry ingredients:
    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Prepare the wet ingredients:
    In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until well combined.
  3.  Combine wet and dry:
    Slowly pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix—it's okay if there are a few lumps.
  4. Add the chocolate chips:
    Gently fold in the chocolate chips.
  5. Heat the pan:
    Place a non-stick pan or griddle over medium heat and grease it with butter or oil.
  6. Cook the pancakes:
  7. Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface (about 2 minutes), then flip and cook for another minute or until golden brown.
  8. Serve:
    Stack the pancakes and serve warm with syrup, extra chocolate chips, or whipped cream.
