DESCRIPTION:

This delicious treat is perfect for any occasion and is guaranteed to make everyone happy!

 

INGREDIENTS:

For the cake:

2½ cups flour

4 tsp. baking powder

2 tbsp. orange zest (about 3 oranges)

¾ cup fresh orange juice

¼ tsp. salt

1 cup (200g) castor sugar

1 cup vegetable oil

3 large eggs

1 tbsp. vanilla essence

For the glaze:

1 cup icing sugar

4 tbsp. orange zest

2 tbsp. orange juice

METHOD:

For the cake:

  1. Preheat your oven to 180°.
  2. Add the sugar and eggs into a large mixing bowl and whisk together until combined.
  3. Add in the vanilla essence and stir it in until dissolved thoroughly.
  4. Add in the vegetable oil, orange juice and orange zest and mix well
  5. Use a sieve to sift in the flour, baking powder and salt, and whisk until the mixture has been well combined, with no lumps. 
    Spray a cake tin with non-stick spray and pour the batter in. 
  6. Bake for 45 minutes to an hour, or until a wooden toothpick inserted into the centre comes out cleanly with few to no crumbs. 
  7. If the cake starts to brown on top, cover it loosely with foil. 
    Remove the cake from the oven once done and set on a wire rack to cool completely. 

 

For the glaze:

  1. In a small bowl, whisk together the icing sugar, orange zest and orange juice until smooth. 
  2. Once the cake is cooled, drizzle the glaze over generously, then let it stand for 30 minutes to set.
  3. Serve with your favourite cup of tea or coffee and enjoy!
