INGREDIENTS:

2 cups (250g) all-purpose flour
2 tbsp sugar
2 tsp baking powder
½ tsp salt
¼ cup (60g) cold butter, cubed
1 tbsp orange zest (from 1 large orange)
½ cup (120ml) fresh orange juice
⅓ cup (80ml) milk
1 tsp vanilla extract
1 egg (for egg wash, optional)

METHOD:

  1. Preheat & Prep – Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Mix Dry Ingredients – In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add Butter – Use your fingers or a pastry cutter to rub the butter into the flour until the mixture looks like breadcrumbs.
  4. Add Flavour – Stir in the orange zest. Combine Wet Ingredients – In a separate bowl, mix the orange juice, milk, and vanilla extract.
  5. Form Dough – Gradually pour the wet ingredients into the dry mixture, stirring until just combined (don’t overmix).
  6. Shape & Cut – Turn the dough onto a floured surface, gently pat it to about 2 cm thick, and cut into rounds or wedges.
  7. Egg Wash (Optional) – Beat an egg and brush it over the scones for a golden finish.
  8.  Bake – Place on a baking tray and bake for 15-18 minutes or until golden brown.
  9. Cool & Enjoy – Let them cool slightly before serving with butter, jam, or clotted cream.
