DESCRIPTION:

Looking for lunchbox ideas? This healthy Tuna Pasta Salad recipe makes a great school lunch.

 

INGREDIENTS:

500g elbow macaroni

3 ribs celery; finely chopped

½ cup onion; finely diced

½ cup fresh parsley; finely chopped

1 carrot; grated

1 can tuna in water; drained

½ cup plus 2 tbsp. reduced-fat mayonnaise

¼ cup plain low-fat yoghurt

1 tbsp. plus 1 tsp. apple cider vinegar

Salt and pepper

METHOD:

  1. Bring a large pot of salted water to a boil.
  2. Add macaroni and cook according to package instructions until al dente.
  3. Drain, rinse with cold water and drain again.
  4. While pasta is cooking, combine celery, onion, parsley, carrot, and tuna in a large bowl.
  5. Add cooled macaroni and toss to combine.
  6. In a small bowl, whisk mayonnaise, yoghurt, and vinegar.
  7. Season with salt and pepper and whisk.
  8. Pour over pasta and toss until well coated.
  9. Cover and refrigerate until ready to serve.
